Lemon Meringue Pie - A few of my favourite things series

This is a Lemon Meringue Cheesecake I made this weekend.

  • with my own lemon curd from the lemons on my tree
  • meringue made from the eggs from my chooks 
  • cream cheese made from the milk from my cow......

 Okay I lied about the last two.  I don't have chooks or a cow, but I did do the lemon curd from my lemon tree :D

Yummmmm!!! and liked the idea of the cow and chooks too, but I want the receipe to make without our own chooks or our own cows and stolen lemons

Okay here is the Recipe with Stolen Lemons, no cow, no chooks.

LEMON CURD
Steal 4 lemons, and return home doing combat manoeuvres and stealth rolly pollys so Mr McGregor doesn't see you.
Grate and juice the lemons, while constantly looking out the kitchen window for Mr McGregor.
Melt 125g butter, stir in stolen lemon juice and 2 C Sugar until sugar is dissolved. Add eggs and stolen lemon rind. (Your suppose to use a double boiler for the next part, but I just used the microwave 1 minute intervals.) Cook until mixture thickens. Eat some and then put remainder in a jar with a label on it, so if Mr McGregor sees it, he will think you have bought it. Discard any leftover evidence.

LEMON MERINGUE CHEESECAKE
250 g crushed bikkies
70g melted butter
1/4 C water
3 tsp gelatine powder
280g Stolen lemon curd
500g cream cheese chopped
3/4 C thickened cream (I never said it was cheap to make or non-fattening)
1/2 C caster sugar
Grated zest of 1/2 stolen lemon (whoops you discarded the evidence, you probably won't have any left, eek you better go back to Mr McGregors. Remember Combat Moves!!)
Extra 1/3 C water
Extra 1 C caster sugar
4 Egg whites

STEP ONE
Put melted butter into a bowl with crushed bikkies and mix. Press into a greased baking tin, 25x16cm or a round tin that looked okay like I did. Put in fridge for 30 minutes.

STEP 2
Put water in a microwave jug and add gelatine, mix, and cook on high for 35-45 secs. Set aside to cool a little. Put lemon curd into a bowl and add 1 Tblspoon of the gelatine mixture and stir. Set aside.

STEP 3
Put cheese, cream, sugar and zest in a large bowl. Beat with electric mixer until combined, starting with low speed then high, until smooth.

STEP 4
Add remaining gelatine mixture to cream cheese mixture (if gelatine has set, microwave for 10 secs). Pour cream cheese/gelatine mixture into bikkie base. Spread lemon curd over base and refrigerate for 4 hours or overnight until it is set.

STEP 5
Put extra water in a saucepan and over a medium heat add extra sugar, stir until combined. Cook for 3 minutes or until sugar is dissolved. Increase heat to high and do not stir for 10 minutes. Remove from heat.

STEP 6
Put eggwhites in the bowl of an electric mixer and beat on medium until soft peaks form. With motor running, add hot sugar syrup in a slow, steady stream. Increase speed to high and beat until mixture is thick and glossy. Spoon meringue onto set base. Then it says to brown with chef's torch, but I didn't have one, so I quickly grilled it in the oven.
